Chocolate Cherry Thumbprint Cookies


Hi guys! I've been on a bit of a hiatus dealing with the dumpster fire that is 2020. No shortage of drinking beer, but trying to cut out the sweets part as much as possible since I can't bring them to the office to share! I hope everyone and their families are staying healthy and safe.

Revolution Brewing has kicked off their Deep Wood Series and we're into the third month already. They came in full force with Thundertaker (a collaboration with Binny's Beverage using their Blanton's barrels) which didn't disappoint. The Deth series (Cafe, OG, Maple) came around in October, which puts us to this month's release. Straight Jacket (barleywine), Deth by Cherries, and Honey Jacket (2019 summer variant of straight jacket).

I was pleasantly surprised with how the cherries played out in Deth by Cherries. If you had their 10 year beer last year, the cherries were very tart and sweet. I was expecting the same here, but not even close. Full chocolate and mild cherry blend together perfectly - a true masterpiece. Enjoy these thumbprint cookies with or without beer - very tasty and festive for the holiday season!


Ingredients

Cookies:

  • 3/4 cup softened unsalted butter

  • 1/2 cup granulated sugar

  • 1 large egg yolk

  • 1/4 tsp. vanilla

  • 1 tsp. Deth by Cherries

  • 1 1/2 cups AP Flour

  • 1/4 cup Cocoa Powder

Cherry Top:

  • 3 Tbsp. Chocolate Chips

  • 1 Tbsp. Deth by Cherries

  • Maraschino Cherries - stem removed

Instructions:

  • Preheat oven to 350°F.

  • In a mixing bowl, cream butter and sugar until light and fluffy. Mix in egg yolk, vanilla, and beer of choice.

  • In another bowl, whisk together flour and cocoa powder; gradually mix into wet ingredients.

  • Use a cookie scoop or roll into 1 in. balls. Place on a large baking sheet with parchment paper or grease pan.

  • Press a deep indentation in center of each with your thumb or any other tool to create a shallow hole (end of wooden spoon, marker cap, etc.)

  • Bake 7-9 minutes or until they hold their shape.

  • Remove and transfer to wire racks to cool completely.

  • Put chocolate chips + beer in a microwave safe dish and microwave for 8-10 seconds - stir until mixed. Be sure to go in small time increments so you don't burn the chocolate.

  • Dip a cherry in the chocolate and then place in the indented cookie. Let dry 5-10 minutes.


You'll have more than enough beer leftover for a full glass and cookies! Cheers !
